You’ll be happy to know that I did indeed put my money where my mouth is…..and made my own mincemeat 😊
As I mentioned in my last post, I do like to tinker with traditional recipes by adding more of my favourite ingredients. That’s the great thing about Christmas Cake and mincemeat. You can just add up the total weight of dried fruit in the recipe, and adapt it to suit your own taste. Well that’s what I do anyway!
So for my mincemeat, I used Whitworths mixed fruit as the base, then added cranberries, apricots, (I couldn’t find chopped ones in my supermarket so got the snack pack and snipped them with scissors!) a few cherries, some chopped apple, cinnamon, nutmeg, lemon and orange zest and juice, a handful of suet, and orange liqueur. I left out the almonds as I’m taking some to the Christmas fair…..and well, allergies and all that. There’s no cooking involved, you just mix everything up, add your alcohol (if using) then sterilise your jars and lids and off you go! But I wish you could have inhaled the aroma, I think I’m addicted to cinnamon……someone find me a support group before I start adding it to everything!
